I got the idea to make lemon cupcakes and then wanted to add another tasting element. Raspberry compliments lemon well.
Lemon Cupcake Recipe
-1.5 cups flour
– 1.5 teaspoons of baking powder
-6 tablespoons unsalted butter
-3/4 cups of sugar
-2 large eggs
-1 tablespoon lemon extract
-1/2 cup plus 2 tablespoons of milk
Beat butter and sugar. Add eggs and lemon extract followed by the milk, and dry ingredients.
Bake at 350 for 15 minutes.
Lemon Icing
-3 cups confectioners sugar
-1/2 cup butter
-2 tablespoon lemon juice
-1/2 teaspoon of vanilla extract
Combine well.
*helpful hint- Let the icing harden. Place small star tip in a bag and fill with icing.
Make small stars around the cupcake. Then add canned raspberry preserve in between the stars.
